As part of my drive to use up anything out of date or close to its end-date from my store cupboards I needed to find a use for a pack of dessicated coconut. Sweet treats are always scrummy but this recipe for cocoa and coconut brownies is to die for and makes 36 bites for under £4.50.
I have a jar of dried red lentils I have been aiming to use up for a long time and this week I finally got round to doing something with them: a frugal curried red lentil and coconut milk soup: slightly spicy, creamy and very tasty and perfect for batch cooking and freezing.

I’m back with a new mealplan and this one is a little bit different but the same as we are now following a consciously healthy diet so there is much more focus on balanced diet and variety than there once might have been – while still trying to stay as frugal as possible!
